Couscous with veggies
When it comes to cooking we follow the same principles as we do in renovating our home: keeping it simple and cheap! This is especially true for our weekday lunches, which often are meatless. So, today we’d like to share one of our go-to recipes that is both quick, healthy and easy on the wallet: Couscous with veggies. This is what you’ll need:

Couscous, frozen veggies (peas for me!), bouillon cubes, spices, sundried tomatoes, tomato paste.
First, cut the dried tomato into small pieces

and grind your spice mixture. I used Jamie Oliver’s cajun spice mix (includes paprika, salt, cayenne-chili, onion, cumin, balck pepper, oregano, garlic, thyme).

You’ll need just a bit more water than couscous. This is about 75 grams of couscous (enough for lunch for one) plus the water:

Heat the water in the microwave and pour it over the couscous:

Crumble in the bouillon (I used about half a cube) and stir:

Add the dried tomato and some tomato paste. Stir.

Let the couscous sit for about five minutes. Meanwhile heat the frozen veggies in the microwave. Then put everything together in a bowl and season to taste. At this stage you could also add some shredded chicken or some tuna for a more substantial meal.

Now a reasonable person would heat a pan and put the whole mixture in there with some oil to get the temperature back up and bring all the flavours together. I, however, am not reasonable but greedy and ate everything lukewarm straight from the bowl. Yum!
